
So last year my dad's fig tree produced so many figs we couldn't eat them fast enough but this year has been much less well, fruitful... So since this seemed like the last round of figs until next year I decided to make a caramelized onion and fig pizza. So good and so easy!
Caramelized Onion and Fig Pizza
Ingredients
1 tube of store bought pizza dough
1T ricotta
1T blue cheese
1T cream cheese
1/2t thyme
1/2t rosemary
1/4 white onion thinly sliced
4-6 fresh figs thinly sliced
3 pieces of bacon crumbled
2T olive oil
pinch of salt and sugar
handful shredded mozzarella or italian blend

Preheat oven to 400 ° Spray and sprinkle a pizza or cookie sheet with cooking spray and cornmeal then roll out dough. Cook onions in 1T olive oil on medium heat with a pinch of salt and sugar until they start to caramelize. I like to cook the bacon under the broiler until almost completely done then chop.
Cook pizza dough for 5 minutes then brush with remaining 1T of olive oil. Combine cheeses, rosemary, and thyme and spread over crust. Top with onions, figs, and bacon and finish with a handful of shredded mozzarella or italian blend and cook for 15-20 minutes.
